Élan Hotel & Spa is excited to welcome a well-known culinary delight, Chef Scott Cohen, to Sustenio as the restaurant’s new Executive Chef.
Chef Cohen brings more than 35 years of esteemed international culinary experience to Sustenio, and has been named one of Conde Naste Traveler’s top 100 chefs in the world. He studied at the Culinary Institute of America at Hyde Park, continued his education in France and served under the top French chef’s Andre Gaillard and Daniel Boulud in New York.
For 13 years, he served as the Executive Chef of the Four-Diamond Las Canarias Restaurant at Omni La Mansión del Rio, and also developed all dining concepts and oversaw culinary operations at its sister restaurant, Pesca on the River at Mokara Hotel & Spa (formerly Watermark Hotel & Spa) in San Antonio. During his time with Omni, Conde Naste rated Las Canarias’ food and beverage program number two in the world.
Chef Scott’s love of Texas cuisine and French culinary techniques paired with the passion for partnering with local farmers and artisans has redefined the region’s food landscape. Cohen has been associated with the Boca Raton Resort and Club in Florida, The Mansion on Turtle Creek in Dallas during Wolfgang Puck's tenure as the hotel's Corporate Executive Chef, The Carlyle Hotel, La Reserve, Tatou Supper Club and The Stanhope Hotel in New York. Most recently, Cohen spearheaded the efforts to revamp the food and beverage operations at Tapatio Hill Country Resort and Spa in Boerne.
In addition to his culinary passion, Cohen also enjoys writing and teaching. He authored the Texas Hill Country Cookbook in 2007, and was a culinary instructor for six years at Le Cordon Bleu College of Culinary Arts in Austin. Cohen, his wife Jaime and their three children have lived in the South Texas area for more than 20 years.
