Sustenio’s Summertime Cocktail Pairings

With crisp morning breezes and seemingly endless sunlight, summer is a perfect excuse to celebrate. Sustenio has an amazing new seasonal menu along with an incredible selection of delectable cocktails. Here are four of our favorite food and cocktails pairings available now at Sustenio.

Prickly Pear Mojito – Sous-vide Fried Chicken
We love this cocktail with Treaty Oak rum, prickly pear puree, simple syrup, lime and mint. Chef Herdman’s Sous-vide Fried Chicken is an upscale take on the traditional southern dish, glazed with a Green Chili-Honey Butter and paired with summer vegetables and Homestyle Mac n’ Cheese.

Passion Chili Margarita – Low & Slow Angus Beef Brisket
The Passion Chili Margarita includes Republic Tequila, passion fruit, jalapeno simple syrup, Patrón Citrónge and lemon. This sweet, yet spicy sip pairs perfect with the Low & Slow Angus Beef Brisket, topped with a local bourbon barbeque sauce, grilled asparagus and “Off the Cob” Street Corn.

Bellini Martini – Cast Iron Seared Scallops
With Deep Eddy Grapefruit, Grand Marnier, Peach Schnapps and sparkling wine, the Bellini Martini is a sweet edition to your dinner. Pair it with Sustenio’s Cast Iron Seared Scallops served with Fried Cauliflower Puree, Roasted Fingerlings, Brussel Leaves and a Red Pepper Butter.

Old Fashioned – Alaskan Halibut
Sustenio’s take on an Old Fashioned contains Buffalo Trace Whiskey, Aromatic Bitters, Luxardo Cherry, sugar cube and orange peel. The unique bitterness pairs beautifully with the new Alaskan Halibut served with Jalapeno-Cheddar Grits, Confit Tomatoes, Summer Squash Hash and Chimichurri.
